The Big Chief comes with one center burner, which is not hot enough to cook large cuts of meat, so I added 2 burners which are available as parts.
Here you can see the main Big Chief burner, and the two Little Chief replacement part burners added on.
The whole interior with an oven thermometer inside. With all three burners going, and no food or water in the smoker, it heats to 425 degrees.
Here are the burners in action. With a water pan and food in the smoker, it will heat up to about 300 degrees if you don't mess with it.
I ordered this on-line, and it checks out with the interior thermometer perfectly.
Here is a brisket, and a water pan going. This was cooked slow with just one burner on, holding 180 degrees perfectly.
I got a metal baking pan for holding water at Safeway, and it fits perfectly on the Big Chief rack holders.
Here is the rain proof chimney - most of the smoke and steam come out here, and it is fun to watch and smell the aroma!
